Mexican Rice Bowl with Creamy Avocado Sauce

Happy 2016 y'all! I hope you had a fantastic new year. We celebrated with our babies, friends and our friends' babies. We ate far too many desserts, watched the ball drop on the East Coast, and were in bed by 10:30 p.m. It was lovely!

After a holiday season and a new year filled with treats, I'm ready to start the new year with a goal. Not a resolution, mind you. Resolutions always get tossed by the wayside come March. No, this is more a goal that we will work on together. This year, I hope to be more mindful of what we're eating.

Last year, we were far too rushed to focus on our meals. We ate too many frozen pizzas and ordered far too much takeout. We often made meals out of bags of Cheetos and m&ms. Don't get me wrong, we ate well much of the time! Like this Coconut Curry Noodle Soup which is hearty enough to be a meal and is perfect for this surprisingly cold winter! Oh, and this Roasted Garlic and Chicken Sausage Pasta which is just the ticket for busy weeknights. But there were far too many meals that were too rushed, too chaotic, and just too meh!

This year, we're going to try to do better. Every meal may not be perfect but we're going to try to eat more vegetables, spend more time around the dinner table, and share tales of our day while we eat. Like this Mexican Rice Bowl with Creamy Avocado Sauce. This sauce! It's the best! It takes an ordinary brown rice bowl and makes it extraordinary. It goes equally well with pasta, and as a sauce for burritos, tacos, and even eggs. Oh my gosh, don't get me started on how great it is with scrambled eggs and breakfast potatoes.

 I know we'll still turn to frozen pizza from time to time, and we're certainly not ready to give up on Cheetos altogether, but we're excited to start the new year right. Here's to wishing you and your family more mindful eating in 2016.

Creamy Avocado Sauce

1 extra large, ripe avocado
Lime juice from 1 lime
1 jalapeno
1/2 cup cilantro
1/2 cup oil
1/8 cup water
1/2 tsp. garlic
1/4 tsp. salt
1/4 tsp. pepper

Add all ingredients, except oil, to food processor. Slowly drizzle in oil while ingredients are blending. Mix thoroughly. Put on everything!


  1. Beautiful! Rice bowls are my new fave, but I've been switching it up with quinoa and other grains. That avocado sauce is stunning!


  2. Oh no...can't give up the Cheetos entirely but here's to eating better in 2016! : ) I love this rice colorful and full of flavors and textures. It's really well balanced!
