Fancy Pants Mediterranean Roasted Cauliflower

I did it. I sold out. I bought myself a pair of fancy-shmancy pants for no reason other than the fact that they made me look taller and thinner. And when you're 5'1 and have just had a baby, you will not think twice about handing over your credit card for the opportunity to look taller and thinner. Heck, you'll pretty much give your right arm to appear taller and thinner.

In my defense, I was ambushed by the world's best salesperson. Who told me I looked great in these pants. That the cotton was picked specifically for me, that some poor person toiled over each stitch, and lovingly ironed the perfect cuff at the bottom, all for me. In short, these pants had only one wish left and they wished I would take them home.

In hindsight, there are so many things that are wrong with these pants. For one, they are utterly impractical. They're the oddest blend of casual and formal- too casual for work and too formal for Target. And let's be real, I don't have much use for pants that are non-work or non-Target appropriate. Second, these pants aren't black or denim. Now really, why would anyone buy pants that are neither black nor denim? Don't answer that. Oh, and the kicker? I swear the price tag has one more digit than it's supposed to. I'm sure of it.

And this after knowing full well that the clothes don't make the person. That good people are good people, regardless of what they wear. That you should not fall for silly salesperson tricks, especially when you're on a sugar high from having had a giant Cinnabon washed down with a giant frappucino. That it's silly to spend absurd amounts of money on trendy clothes because they'll go out of style in one season. That's it's wisest to spend money on classic and versatile pieces that will stand the test of time.

And after all that, I still grin when I see those pants hanging so perfectly and gorgeously in my closet. I swear, they even make my closet look taller and thinner.

And having realized the absurdity of all of the above, there was nothing left to do this past weekend but make something somewhat healthy and lowfat to fit into the aforementioned pants. Introducing Mediterranean Roasted Cauliflower. Coated in good olive oil and sprinkled with kosher salt and garlic, this is quite possibly the simplest and most delicious cauliflower recipe ever. The florets are baked at a high temperature until they're tender and the edges are perfectly charred and crispy. Oh, and something magical happens to the garlic when roasted. Eaten as a main course or a perfectly luxurious side dish, it's definitely going to be my go-to vegetable for the next long while.

Your turn to come clean. What was the last purchase you felt silly and yet, perfectly content, about?

Mediterranean Roasted Cauliflower

1 head cauliflower
2-4 cloves garlic
1 tsp. onion powder
Kosher salt
Olive oil
1/4 cup finely chopped fresh parsley (or herb of your choice)

Heat oven to 425 degrees.

Cut cauliflower into florets. Grate garlic cloves on a microplane and mix with olive oil to make a runny paste. Add onion powder, salt, and pepper to garlic oil mixture. Stir oil mixture. Pour oil over cauliflower florets and toss to coat.

Spread cauliflower mixture on large baking sheet in a single layer. Bake for 10 minutes and stir cauliflower to avoid scorching. Bake for another 10 minutes. Poke floret with fork to ensure it's cooked. Broil for 2-4 minutes, peering impatiently through oven window to ensure that your delicious cauliflower doesn't burn.

Remove from oven. Mix in fresh herbs. Eat immediately, burning roof of mouth.


  1. You're 5'1"??? Seriously? You come across as much taller. :) I can't think of the last thing I bought just for me, but I can come up with a lot of stuff that was bought 'just for her.' I will be buying cauliflower so I can make this though. It sounds (and looks) absolutely amazing.

    I'm just glad to see that it's not ramen noodles.

  3. For some reason after giving birth to the 2nd kid, the platform heels kept luring me in. I mean, all the pregnant celebrities were wearing them and then still wearing them while juggling their new bundle and a cup of starbucks. Why couldn't I?

    I bought a pair of nude colored platforms that were just a tad bit too high. Who am I kidding...anything higher than my Converse were too high.

    Anyway, I force myself to wear them, but they are my 2-4 hour shoes. 4 hours if i'm at an event where i'm sitting most of the time. :-)

    btw...i love roasted cauliflower!

  5. Mmmmmmm....your cauliflower looks wonderful. I finally got the picky hubby to eat cauliflower by roasting it...and now I must try your recipe. And everybody needs at least one pair of pants that's somewhere between jeans and dressy :)

  6. I bought a pair of pants like that a few weeks ago...they are totally inappropriate for everything. They are too tight. They are utterly uncomfortable. And I have nothing to wear with them. But they look fabulous! And I love that they are hanging in my closet. :)

  9. This recipe sounds totally fantastic!! And I love your pants story. After two glasses of wine my husband and I impulse purchased tickets to Hawaii... it didn't make me look taller or thinner but I felt about 100 pounds lighter after a week on the beach :)

  10. I have so many pairs of pants in that in-between stage. And I always end up just wearing them to work because they're so comfy and they look so good. Everything I've been buying for our wedding is outrageously priced and so much of it isn't necessary, but I'm in the mindset that you only live once and only have one wedding and we want it to be a night to remember :)

    Oh, and this cauliflower looks awesome!

  16. Within seconds of pulling this post up, my husband perked to attention and said "that looks good" which means we will likely have to try it at least once. I do have a soft spot for roasted vegetables, so I should probably try roasted cauliflower before writing it off completely, right?

    And we all have the pants in our closet that seldom are worn but make us feel thinner and taller. Even if we are tall! You are definitely not alone on that front!

  17. I love roasted cauliflower. It's one of the good things about cold weather eating.

    And don't feel guilty about the pants. Sometimes we all need a little treat, even if it comes at a very expensive price. I once bought a sundress because it made my boobs look great. Yes. I totally bought a dress because of what it did for my boobs. So don't feel guilty. At least your purchase was for purer reasons. :)

  20. Lol, I'd fall for it too. Especially the thinner part, sigh. You are gorgeous and you look much taller than 5'1". I guess it's true, it's all about how you carry yourself. I myself always appear taller because I'm always carrying cookies. He he. Hopefully I can carry some your way when we meet for brunch. I'm available anytime as soon as the second round of flu we got clears out. Maybe some of your amazing cauliflower would help.

This is the 2nd cauliflower post I have seen today that actually looks good... erm, before you take offense let me quickly clarify that I HATE cauliflower. cannot stand the smell and just hate the taste. But this looks like I should make an attempt. To cook I mean, for my husband. Not brave enough to eat yet :P
    And hey, fancy pants are always a good pick-me-up! I just bought a new handbag and trust me, it had an extra digit too :( and the next day no one at work even noticed it!! whats the point i tell you... sigh!

  23. I can't talk about shopping with intelligence as I suffer from terrible buyer's remorse - every single time I have to be dragged back home when I attempt to go back to the store and return everything I bought.
    But just the other day I purchased TWO pairs of pants, one pair of capris, and one pair of yoga pants (all in black, as I want to appear more slender, definitely), without blinking and without my heart going into a crazy rhythm, trying to break out of my chest in anxiety:)
    BTW, I love roasted cauliflower - so unassuming, so simple, and yet so flavorful:)
    I hope that baby of yours is giving you as much love as you need. I still get a lot of hugs and kisses and my girls are 12 and 13 (the 20-yr-old is not as cuddly:)

  25. Delicious!! Made this today; we ate almost the whole thing for lunch. I'll have to double the recipe next time - two heads are better than one!!
